Tasty eggplant appetizers rolled up with a flavorful filling.
Ingredients

- 1 large eggplant
- 1 cup ricotta cheese
- 1 cup spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the eggplant into thin strips.
- Brush each strip with olive oil.
- Bake for 20 minutes until soft.
- In a bowl, mix ricotta, spinach, mozzarella, parmesan, garlic powder, salt, and pepper.
- Place a spoonful of the mixture on each eggplant strip.
- Roll up the strips and place them seam-side down on a baking dish.
- Bake for an additional 15 minutes until heated through.
Notes
- Serve warm for best flavor.
- Can be made ahead and reheated.
