A delicious and easy eclair ice box cake that everyone will love.
Ingredients

- 2 packs of graham crackers
- 2 cups of heavy whipping cream
- 1 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 box of chocolate pudding mix
- 3 cups of milk
Instructions
- In a bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, then mix until combined.
- In another bowl, combine chocolate pudding mix with milk. Whisk until thickened.
- In a 9×13 inch dish, layer graham crackers at the bottom.
- Spread half of the pudding mixture over the graham crackers.
- Add half of the whipped cream mixture on top of the pudding.
- Repeat the layers with remaining ingredients.
- Top with more whipped cream if desired.
- Chill in the refrigerator for at least 4 hours before serving.

- Keep refrigerated for best texture.
- Can be made a day in advance.
