Description
A simple and hearty zuppa toscana soup made with potatoes, kale, and sausage.
Ingredients

- 1 lb Italian sausage
- 4 cups chicken broth
- 2 cups kale, chopped
- 3 medium potatoes, diced
- 1 cup heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add onion and garlic, cooking until the onion is translucent.
- Stir in the chicken broth and diced potatoes. Bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add kale and heavy cream, cooking until the kale is wilted.
- Season with salt and pepper before serving.

- Use spicy sausage for more flavor.
- Substitute kale with spinach if preferred.
