A simple and hearty white bean soup recipe.
Ingredients

- 2 cups cooked white beans
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for another minute.
- Stir in cooked white beans, broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
Notes
- Use canned beans for quicker preparation.
- Serve with crusty bread.
