This easy vegan tomato basil soup is comforting and delicious.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add crushed tomatoes, vegetable broth, dried basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add fresh basil and lemon juice. Blend for a smoother texture if desired.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Serve with crusty bread.
- Store leftovers in the refrigerator for up to 3 days.
