- 4 large potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter
- 1/4 cup chopped green onions
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Bake the potatoes for about 1 hour until tender.
- Let the potatoes cool slightly, then cut them in half and scoop out the insides into a bowl.
- Add sour cream, cheese, milk, butter, green onions, salt, and pepper to the potato insides.
- Mix until smooth and creamy.
- Fill the potato skins with the mixture.
- Top with remaining cheese.
- Bake for an additional 20 minutes until heated through.
Notes
- For a healthier option, use Greek yogurt instead of sour cream.
- Add bacon bits for extra flavor.
- This dish can be made ahead and refrigerated before baking.
