Ingredients

- 1 can coconut milk
- 2 tablespoons red curry paste
- 1 cup dumplings (frozen or fresh)
- 1 cup mixed vegetables (carrots, bell peppers, and snap peas)
- 1 tablespoon soy sauce
- 1 teaspoon lime juice
- Fresh cilantro for garnish
Instructions
- In a large pot, heat vegetable broth over medium heat.
- Add coconut milk and red curry paste. Stir to combine.
- Bring the mixture to a simmer.
- Add dumplings and mixed vegetables to the pot.
- Cook until dumplings are heated through and vegetables are tender.
- Stir in soy sauce and lime juice.
- Serve hot, garnished with fresh cilantro.

- Adjust the spice level by adding more or less curry paste.
- Use any type of dumplings you prefer.
