A simple and delicious taco casserole topped with Fritos.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese
- 3 cups Fritos
Instructions
- Preheat oven to 350°F.
- In a skillet, brown the ground beef.
- Add black beans, corn, taco seasoning, and salsa to the skillet. Mix well.
- Spread the beef mixture in a baking dish.
- Top with half of the shredded cheese.
- Add Fritos on top of the cheese.
- Sprinkle the remaining cheese on top of the Fritos.
- Bake for 20 minutes or until cheese is melted.
Notes
- Feel free to add your favorite toppings like sour cream or avocado.
- This dish can be made ahead and frozen.
- Substitute ground turkey for a leaner option.
