Ingredients

- 1 pound chicken breast, diced
- 1/2 cup sweet chili sauce
- 2 cups cooked rice
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced chicken and cook until browned.
- Stir in sweet chili sauce and cook for 5 minutes.
- Add bell peppers and broccoli; cook until vegetables are tender.
- Serve over cooked rice.
Notes
- Adjust sweet chili sauce to taste.
- Add other vegetables if desired.
- Can substitute chicken with tofu for a vegetarian option.
