- 1 pound ground beef
- 1 onion, chopped
- 2 bell peppers, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 cup uncooked rice
- 2 teaspoons Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion, bell peppers, and garlic. Cook until softened.
- Stir in the diced tomatoes, beef broth, rice, Italian seasoning, salt, and pepper.
- Bring the soup to a boil, then reduce to a simmer.
- Cover and cook for 20-25 minutes, until the rice is tender.
- Serve hot.
Notes
- Can substitute ground turkey for beef.
- Add more vegetables for extra nutrition.
