- 1 pound shrimp, peeled and deveined
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 cup shredded cheese
- 1/2 cup salsa
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shrimp, cumin, chili powder, salt, and pepper.
- Cook shrimp until pink, about 3-4 minutes.
- Warm tortillas in a separate skillet or microwave.
- In each tortilla, layer rice, beans, corn, shrimp, cheese, and salsa.
- Fold the sides of the tortilla and roll it up.
- Serve warm.

- You can adjust spices according to your taste.
- Substitute shrimp with chicken or tofu if desired.
