Ingredients

- 3 medium beets, cooked and peeled
- 1 medium onion, finely chopped
- 1 medium carrot, grated
- 1 cup pickles, diced
- 1/2 cup mayonnaise
- Salt to taste
- Pepper to taste
Instructions
- Cook the beets until tender, then peel and chop them.
- In a bowl, combine chopped beets, onion, grated carrot, and diced pickles.
- Add mayonnaise and mix well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for 30 minutes before serving.
