This easy rice pilaf recipe is simple and delicious, perfect for any meal.

			- 1 cup long-grain rice
 - 2 cups chicken or vegetable broth
 - 1 medium onion, chopped
 - 2 tablespoons olive oil
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/4 cup chopped parsley (optional)
 
Instructions
- Heat olive oil in a saucepan over medium heat.
 - Add the chopped onion and sauté until translucent.
 - Stir in the rice and cook for 2 minutes.
 - Add the broth, salt, and pepper. Bring to a boil.
 - Reduce heat, cover, and simmer for 18-20 minutes.
 - Remove from heat and let it sit for 5 minutes.
 - Fluff rice with a fork and stir in parsley if desired.

- For added flavor, you can toast the rice before adding the broth.
