Description
A simple and delicious pumpkin soup that warms you up.
Ingredients

			- 1 medium pumpkin, peeled and cubed
 - 1 onion, chopped
 - 2 cloves garlic, minced
 - 4 cups vegetable broth
 - 1 cup coconut milk
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1 teaspoon ground ginger
 - 2 tablespoons olive oil
 
Instructions
- Heat olive oil in a large pot over medium heat.
 - Add onion and garlic, sauté until soft.
 - Add pumpkin, salt, pepper, and ginger. Stir well.
 - Pour in vegetable broth and bring to a boil.
 - Reduce heat and simmer for 20 minutes, until pumpkin is tender.
 - Blend the soup until smooth.
 - Stir in coconut milk and heat through.
 - Serve hot.

- Use fresh or canned pumpkin puree for convenience.
 - Adjust spices according to your taste.
 - Garnish with pumpkin seeds or herbs if desired.
