Ingredients

  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom of a mini muffin pan.
  4. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream until combined.
  7. Pour the cheesecake mixture over the crust in the mini muffin pan.
  8. Bake for 20-25 minutes or until the edges are set.
  9. Let cool before refrigerating for at least 2 hours.
  10. Serve chilled.
