- 2 cups vegetable broth
- 1 tablespoon vegetable oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 cup diced tomatoes
- 1/2 cup frozen peas
Instructions
- Rinse the rice under cold water.
- Heat oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in rice, cumin, and chili powder, cook for 2 minutes.
- Add vegetable broth, tomatoes, and salt.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
- Stir in peas and let sit for 5 minutes before serving.
