A simple recipe for jello meringue cookies that are light and flavorful.
Ingredients

- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1/4 cup jello powder (any flavor)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 225°F (110°C).
- In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the sugar while continuing to beat until stiff peaks form.
- Gently fold in the jello powder and vanilla extract.
- Drop spoonfuls of the meringue mixture onto a baking sheet lined with parchment paper.
- Bake for 1 hour or until the cookies are dry and can be easily lifted off the parchment.
- Turn off the oven and let the cookies cool inside for an additional hour.
Notes
- Store cookies in an airtight container.
- You can experiment with different jello flavors.
- Make sure no yolk gets into the egg whites.
