Ingredients

  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add chicken and cook until browned.
  3. Stir in onion, bell pepper, and garlic; cook until softened.
  4. Add rice, diced tomatoes, chicken broth, and Cajun seasoning.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add shrimp and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot.
