Ingredients

- 1 cup long-grain rice
- 1 pound chicken breast, diced
- 1 pound shrimp, peeled and deveined
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat oil over medium heat.
- Add chicken and cook until browned.
- Stir in onion, bell pepper, and garlic; cook until softened.
- Add rice, diced tomatoes, chicken broth, and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add shrimp and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- Feel free to add sausage for more flavor.
- Adjust spice level with more or less Cajun seasoning.
- Use vegetable broth for a vegetarian option.
