Easy discard banana bread recipe using leftover sourdough starter.
Ingredients

- 2 ripe bananas, mashed
- 1 cup sourdough starter
- 1/2 cup sugar
- 1/3 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix mashed bananas, sourdough starter, sugar, melted butter, egg, and vanilla.
- Add baking soda and salt. Mix well.
- Gradually add flour and stir until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Use very ripe bananas for best flavor.
- This bread freezes well.
- Add nuts or chocolate chips for extra flavor.
