Ingredients

- 1 lb chicken breast
- 2 cups vegetable broth
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp oregano
- 1 tsp basil
- Salt and pepper to taste
Instructions
- Place chicken in the crockpot.
- Add vegetable broth, diced tomatoes, onion, and garlic.
- Season with oregano, basil, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving.

- Serve with rice or bread.
- Can add vegetables like carrots or bell peppers.
