Ingredients

  • 200g mixed dried fruit
  • 100g butter
  • 150g sugar
  • 2 eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 100ml milk
  • 100g icing sugar
  • 50ml water

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, melt the butter and sugar together.
  3. Add the eggs and mix well.
  4. Combine the flour, baking powder, and cinnamon in a bowl.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Stir in the mixed dried fruit.
  7. Pour in the milk and mix until smooth.
  8. Grease a cake tin and pour in the batter.
  9. Bake for 30-35 minutes or until a skewer comes out clean.
  10. Let the cake cool before icing.
  11. Mix icing sugar with water to create icing and spread over the cake.
