A simple and delightful Christmas cake that anyone can make.
Ingredients

- 200g mixed dried fruit
- 100g butter
- 150g sugar
- 2 eggs
- 200g all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 100ml milk
- 100g icing sugar
- 50ml water
Instructions
- Preheat your oven to 180°C (350°F).
- In a saucepan, melt the butter and sugar together.
- Add the eggs and mix well.
- Combine the flour, baking powder, and cinnamon in a bowl.
- Gradually add the dry ingredients to the wet mixture.
- Stir in the mixed dried fruit.
- Pour in the milk and mix until smooth.
- Grease a cake tin and pour in the batter.
- Bake for 30-35 minutes or until a skewer comes out clean.
- Let the cake cool before icing.
- Mix icing sugar with water to create icing and spread over the cake.

- Store in an airtight container.
- Can be made a few days in advance.
- Decorate with festive toppings if desired.
