Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, heat some oil over medium heat.
  3. Add the diced chicken and sprinkle with chipotle seasoning.
  4. Cook until chicken is browned and cooked through, about 6-8 minutes.
  5. In a bowl, layer rice, chicken, black beans, corn, tomatoes, and avocado.
  6. Garnish with cilantro and lime juice.
