Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 tablespoon chipotle seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions.
- In a skillet, heat some oil over medium heat.
- Add the diced chicken and sprinkle with chipotle seasoning.
- Cook until chicken is browned and cooked through, about 6-8 minutes.
- In a bowl, layer rice, chicken, black beans, corn, tomatoes, and avocado.
- Garnish with cilantro and lime juice.
- Season with salt and pepper to taste.

- Customize with your favorite toppings.
- Use quinoa instead of rice for a different base.
- Store leftovers in the fridge for up to 3 days.
