Ingredients

  • Cooked chicken: 2 cups, shredded or diced
  • Broccoli: 2 cups, fresh or frozen
  • Cream of chicken soup: 1 can (10.5 oz)
  • Cheddar cheese: 1 cup, shredded
  • Rice: 1 cup, cooked (white or brown)
  • Breadcrumbs: 1 cup (preferably seasoned)
  • Olive oil: 1 tablespoon (for greasing)
  • Salt and pepper: to taste

Instructions

  1. Prep the chicken by shredding or dicing it into bite-sized pieces.
  2. Prepare the broccoli by cutting it into small florets or thawing frozen broccoli.
  3. In a large mixing bowl, combine the chicken, broccoli, cream of chicken soup, cooked rice, and half of the cheddar cheese. Season with salt and pepper.
  4. Pour the mixture into a greased 9×13 inch baking dish and spread it evenly.
  5. Sprinkle the remaining cheddar cheese and breadcrumbs on top.
  6. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden brown and bubbly.
  7. Let it cool for a few minutes before serving.
