A comforting and easy-to-make chicken and broccoli casserole that is perfect for weeknight dinners.
Ingredients
- Cooked chicken: 2 cups, shredded or diced
- Broccoli: 2 cups, fresh or frozen
- Cream of chicken soup: 1 can (10.5 oz)
- Cheddar cheese: 1 cup, shredded
- Rice: 1 cup, cooked (white or brown)
- Breadcrumbs: 1 cup (preferably seasoned)
- Olive oil: 1 tablespoon (for greasing)
- Salt and pepper: to taste
Instructions
- Prep the chicken by shredding or dicing it into bite-sized pieces.
- Prepare the broccoli by cutting it into small florets or thawing frozen broccoli.
- In a large mixing bowl, combine the chicken, broccoli, cream of chicken soup, cooked rice, and half of the cheddar cheese. Season with salt and pepper.
- Pour the mixture into a greased 9×13 inch baking dish and spread it evenly.
- Sprinkle the remaining cheddar cheese and breadcrumbs on top.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden brown and bubbly.
- Let it cool for a few minutes before serving.

- Feel free to customize with optional ingredients like garlic powder, onion powder, or different vegetables.
