A simple and delicious burrito casserole that combines all your favorite burrito ingredients in one dish.


Ingredients

  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 8 flour tortillas, cut into strips
  • 1 cup sour cream
  • 1/2 cup chopped green onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook ground beef over medium heat until browned.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning.
  4. In a baking dish, layer half of the tortilla strips.
  5. Add half of the meat mixture on top of the tortillas.
  6. Spread half of the sour cream over the meat.
  7. Sprinkle with half of the cheese.
  8. Repeat layers with remaining ingredients.
  9. Bake for 25-30 minutes until cheese is melted and bubbly.
