Ingredients

- 2 large cucumbers
- 1 tablespoon salt
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds
- 1/4 teaspoon red pepper flakes
- 2 green onions, chopped
Instructions
- Slice the cucumbers thinly.
- Sprinkle with salt and let sit for 15 minutes.
- In a bowl, mix rice vinegar, sugar, soy sauce, and sesame oil.
- Rinse cucumbers and pat dry.
- Toss cucumbers with the dressing.
- Add sesame seeds, red pepper flakes, and green onions.
- Mix well and serve chilled.
Notes
- For a spicier salad, add more red pepper flakes.
- Garnish with additional sesame seeds if desired.
- This salad can be made ahead of time and stored in the fridge.
