- 2 cups corn kernels
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon baking powder
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- In a bowl, mix corn, flour, milk, eggs, salt, pepper, and baking powder.
- Add green onions and stir until combined.
- Heat oil in a frying pan over medium heat.
- Scoop batter and drop into hot oil, flatten slightly.
- Cook until golden brown, about 3-4 minutes per side.
- Drain on paper towels.
- Serve warm.

- Use fresh or canned corn.
- Adjust seasoning to taste.
- Serve with dipping sauce if desired.
