Easy and delicious corn fritters are a quick snack or side dish made from fresh corn.
Ingredients

- 2 cups fresh corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup milk
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon baking powder
- 2 tablespoons chopped green onions
- Oil for frying
Instructions
- In a bowl, combine corn, flour, cornmeal, milk, and eggs.
- Add salt, pepper, baking powder, and green onions. Mix well.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of batter into the skillet.
- Fry until golden brown, about 3-4 minutes per side.
- Remove from skillet and drain on paper towels.
Notes
- Serve with sour cream or salsa.
- You can add spices for extra flavor.
- Store leftovers in the refrigerator.
