- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix flour, salt, pepper, and garlic powder.
- Dip each shrimp in the flour mixture, then in the beaten eggs, and finally coat with coconut and panko.
- Place the shrimp in a single layer in the air fryer basket.
- Cook for 8-10 minutes, flipping halfway through, until golden brown.
- Serve with your favorite dipping sauce.
Notes
- Make sure shrimp are dry before coating.
- Adjust cooking time based on the size of the shrimp.
- Use sweetened or unsweetened coconut as desired.
