Easter birds nest cookies are a fun and festive treat for the holiday.
Ingredients

- 1 cup butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chocolate eggs (for decoration)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and sugar.
- Add the flour, cocoa powder, and vanilla extract. Mix well.
- Fold in the shredded coconut.
- Shape the mixture into small balls and place them on a baking sheet.
- Make an indentation in the center of each ball to form a nest.
- Bake for 12-15 minutes.
- Remove from the oven and let them cool.
- Once cooled, fill the nests with chocolate eggs.
Notes
- Store cookies in an airtight container.
- Use different colored chocolate eggs for variety.
- Adjust the sweetness by adding more or less sugar.
