A rich and creamy dessert with a caramelized sugar top.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 6 large egg yolks
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup brown sugar for topping
Instructions
- Preheat the oven to 325°F (165°C).
- In a saucepan, combine heavy cream, milk, and vanilla. Heat until just simmering.
- In a bowl, whisk egg yolks, granulated sugar, and salt until smooth.
- Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
- Strain the mixture through a fine sieve into a pitcher.
- Pour the mixture into ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 35-40 minutes until set but still slightly jiggly.
- Let cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and use a torch to caramelize.
Notes
- Use fresh ingredients for best flavor.
- Make sure the cream mixture is not too hot when adding to egg yolks.
- Allow the custard to set completely before caramelizing the sugar.
