Description

A rich and creamy dessert with a caramelized sugar top.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar for topping

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, combine heavy cream, milk, and vanilla. Heat until just simmering.
  3. In a bowl, whisk egg yolks, granulated sugar, and salt until smooth.
  4. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine sieve into a pitcher.
  6. Pour the mixture into ramekins.
  7. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  8. Bake for 35-40 minutes until set but still slightly jiggly.
  9. Let cool, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle brown sugar on top and use a torch to caramelize.

Notes

  • Use fresh ingredients for best flavor.
  • Make sure the cream mixture is not too hot when adding to egg yolks.
  • Allow the custard to set completely before caramelizing the sugar.
