Ingredients

  • 1/4 cup goat cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chives or paprika for garnish

Instructions

  1. Hard boil the eggs by placing them in a pot and covering with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
  2. Cool the eggs in ice water, then peel them.
  3. Slice the eggs in half and remove the yolks.
  4. In a bowl, combine yolks, goat cheese, mayonnaise, mustard, lemon juice, salt, and pepper. Mix until smooth.
  5. Spoon or pipe the mixture back into the egg whites.
  6. Garnish with chives or paprika.
