Description

A unique twist on traditional sushi with deviled egg filling.


Ingredients

  • 4 large eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon vinegar
  • Salt to taste
  • Pepper to taste
  • 4 sheets of nori
  • 2 cups sushi rice
  • 2 tablespoons rice vinegar
  • 1 avocado, sliced
  • Cucumber, julienned

Instructions

  1. Boil eggs for 10 minutes and cool them in cold water.
  2. Peel the eggs and slice them in half. Remove yolks into a bowl.
  3. Mix yolks with mayonnaise, mustard, vinegar, salt, and pepper.
  4. Prepare sushi rice according to package instructions and mix with rice vinegar.
  5. Place a sheet of nori on a bamboo mat.
  6. Spread a layer of sushi rice over the nori.
  7. Add a line of the deviled egg mixture, avocado, and cucumber.
  8. Roll the sushi tightly and slice into pieces.
  9. Serve with soy sauce or your choice of dipping sauce.
