- 4 large potatoes, peeled and diced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and set aside.
- In a skillet, melt butter over medium heat. Sauté onions and garlic until soft.
- Add heavy cream, cheddar cheese, salt, and pepper to the skillet. Stir until cheese melts.
- Add potatoes to the skillet. Mix well to coat.
- Transfer the mixture to a greased baking dish. Sprinkle with Parmesan cheese.
- Bake for 25-30 minutes, until golden brown and bubbly.

- For a spicier version, add jalapeños.
