Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the diced potatoes in salted water until tender, about 15 minutes.
  3. Drain the potatoes and set aside.
  4. In a skillet, melt butter over medium heat. Sauté onions and garlic until soft.
  5. Add heavy cream, cheddar cheese, salt, and pepper to the skillet. Stir until cheese melts.
  6. Add potatoes to the skillet. Mix well to coat.
  7. Transfer the mixture to a greased baking dish. Sprinkle with Parmesan cheese.
  8. Bake for 25-30 minutes, until golden brown and bubbly.
