A sweet and tangy jelly made from dandelion flowers and ginger.
Ingredients

- 2 cups dandelion flowers
- 1 tablespoon grated ginger
- 4 cups water
- 1/4 cup lemon juice
- 1 package pectin
- 5 cups sugar
Instructions
- Gather dandelion flowers and rinse them thoroughly.
- In a pot, combine flowers and water. Bring to a boil and simmer for 30 minutes.
- Strain the mixture to extract liquid.
- Add lemon juice and grated ginger to the liquid.
- Stir in pectin and bring to a boil.
- Add sugar gradually, stirring constantly.
- Boil for an additional 1-2 minutes until thickened.
- Pour into sterilized jars and seal.
Notes
- Use only yellow dandelion flowers.
- Ensure no pesticides are used on the flowers.
- Store in a cool, dark place.
