Description
A sweet and floral jelly made from dandelion flowers using pectin.
Ingredients

- 4 cups dandelion petals
- 4 cups water
- 1/4 cup lemon juice
- 1 package (1.75 oz) pectin
- 5 cups sugar
Instructions
- Gather dandelion petals and rinse them thoroughly.
- Combine petals and water in a pot; bring to a boil.
- Simmer for 30 minutes; strain liquid to remove petals.
- Add lemon juice and pectin to the liquid; stir well.
- Bring mixture to a rapid boil; add sugar all at once.
- Boil for 1 minute, stirring constantly.
- Pour into sterilized jars and seal immediately.
- Let cool at room temperature before storing.
Notes
- Ensure you only use dandelions that have not been treated with pesticides.
- Store jelly in a cool, dark place.
- This jelly pairs well with toast and desserts.
