Description

A sweet and floral jelly made from dandelion flowers using pectin.


Ingredients

  • 4 cups dandelion petals
  • 4 cups water
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) pectin
  • 5 cups sugar

Instructions

  1. Gather dandelion petals and rinse them thoroughly.
  2. Combine petals and water in a pot; bring to a boil.
  3. Simmer for 30 minutes; strain liquid to remove petals.
  4. Add lemon juice and pectin to the liquid; stir well.
  5. Bring mixture to a rapid boil; add sugar all at once.
  6. Boil for 1 minute, stirring constantly.
  7. Pour into sterilized jars and seal immediately.
  8. Let cool at room temperature before storing.
