A creamy and tangy dairy-free Caesar dressing perfect for salads.
Ingredients

- 1/2 cup raw cashews, soaked for 4 hours
- 1/4 cup water
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon capers
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutritional yeast
Instructions
- Drain and rinse the soaked cashews.
- In a blender, combine cashews, water, lemon juice, Dijon mustard, capers, garlic, salt, pepper, and nutritional yeast.
- Blend until smooth and creamy.
- Taste and adjust seasoning if needed.
- Store in the refrigerator for up to one week.
