Description
A refreshing and protein-packed curried chickpea salad.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1/2 cup diced cucumber
- 1/2 cup diced bell pepper
- 1/4 cup red onion, finely chopped
- 1/4 cup raisins
- 1/4 cup plain yogurt
- 2 tablespoons curry powder
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, and raisins.
- In a separate bowl, mix yogurt, curry powder, lemon juice, salt, and pepper.
- Pour the dressing over the salad ingredients and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve chilled for best flavor.
- Can add more vegetables as desired.
