Description

Ingredients

  • 4 cups water
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar

Instructions

  1. Rinse and soak the black beans overnight.
  2. Drain the beans and place them in a pot with water.
  3. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. In a separate pan, heat olive oil and sauté onion, bell pepper, and garlic until soft.
  5. Add cumin, bay leaf, salt, and pepper to the sautéed mixture.
  6. Combine the vegetable mixture with the drained beans.
  7. Add vinegar and stir well.
  8. Simmer for another 30 minutes.
  9. Remove the bay leaf before serving.
