Ingredients

- 1 cup dried black beans
- 4 cups water
- 1 onion, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 bay leaf
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon vinegar
Instructions
- Rinse and soak the black beans overnight.
- Drain the beans and place them in a pot with water.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- In a separate pan, heat olive oil and sauté onion, bell pepper, and garlic until soft.
- Add cumin, bay leaf, salt, and pepper to the sautéed mixture.
- Combine the vegetable mixture with the drained beans.
- Add vinegar and stir well.
- Simmer for another 30 minutes.
- Remove the bay leaf before serving.
Notes
- Serve with rice for a complete meal.
- Adjust seasoning to taste.
- Can be stored in the refrigerator for up to a week.
