Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon cumin
  • Vegetables of your choice (e.g., cucumber, bell pepper, avocado)

Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, combine the rice and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 45 minutes or until water is absorbed.
  4. While rice cooks, preheat the oven to 400°F (200°C).
  5. Place salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  6. Bake salmon for 12-15 minutes until cooked through.
  7. In a bowl, mix tahini, lemon juice, garlic, parsley, cilantro, and cumin to create the dressing.
  8. Once the rice is cooked, fluff it with a fork and serve in bowls.
  9. Top with salmon and your choice of vegetables.
  10. Drizzle herbed tahini dressing over the bowls before serving.
