A comforting and flavorful Thai coconut chicken soup made in a crockpot.
Ingredients

- 1 lb chicken breast, boneless and skinless
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 cup mushrooms, sliced
- 1 red bell pepper, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp brown sugar
- 2 cups spinach
- Fresh cilantro for garnish
Instructions
- Place chicken breast in the crockpot.
- Add coconut milk, chicken broth, mushrooms, bell pepper, onion, garlic, and ginger.
- Stir in fish sauce, lime juice, and brown sugar.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- 30 minutes before serving, shred the chicken in the crockpot.
- Add spinach and stir until wilted.
- Serve hot, garnished with fresh cilantro.
Notes
- Adjust seasoning as needed.
- For a spicier soup, add red pepper flakes.
- Can substitute chicken with tofu for a vegetarian option.
