Ingredients

  • 1 lb chicken breast, boneless and skinless
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 2 cups spinach
  • Fresh cilantro for garnish

Instructions

  1. Place chicken breast in the crockpot.
  2. Add coconut milk, chicken broth, mushrooms, bell pepper, onion, garlic, and ginger.
  3. Stir in fish sauce, lime juice, and brown sugar.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. 30 minutes before serving, shred the chicken in the crockpot.
  6. Add spinach and stir until wilted.
  7. Serve hot, garnished with fresh cilantro.
