A delicious and comforting crockpot sweet potato casserole that’s perfect for any gathering.
Ingredients

- 4 cups sweet potatoes, peeled and cubed
- 1 cup brown sugar
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup mini marshmallows
Instructions
- Prepare sweet potatoes and add them to the crockpot.
- In a bowl, mix brown sugar, milk, melted butter, eggs, vanilla, cinnamon, and nutmeg.
- Pour the mixture over sweet potatoes in the crockpot.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- During the last 30 minutes, top with mini marshmallows.
- Serve warm.
Notes
- This dish can be made ahead of time and reheated.
- Adjust the sweetness by adding more or less brown sugar.
- Top with pecans for added crunch if desired.
