- 1 lb chicken breast
- 4 cups chicken broth
- 2 cups diced vegetables (carrots, celery, onions)
- 1 can diced tomatoes
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1 cup pasta (optional)
Instructions
- Place chicken breast in the crockpot.
- Add chicken broth and diced vegetables.
- Add diced tomatoes and seasonings.
- Cover and cook on low for 6-8 hours.
- Shred chicken before serving.
- If using, add pasta 30 minutes before serving.
Notes
- Adjust seasoning to taste.
- Can add beans for extra protein.
- Store leftovers in the fridge for up to 3 days.
