Ingredients
- Italian sausage: 1 lb (about 4 links)
- Bell peppers: 3 (1 red, 1 yellow, 1 green)
- Onions: 1 large
- Garlic: 4 cloves
- Diced tomatoes: 1 can (14.5 oz)
- Italian seasoning: 2 teaspoons
- Olive oil: 1 tablespoon
- Salt and pepper: To taste
Instructions
- Prepare all ingredients by slicing bell peppers, onions, and mincing garlic.
- Layer sliced bell peppers at the bottom of the crockpot, followed by onions and minced garlic.
- Add browned or whole sausage links on top of the vegetables.
- Pour diced tomatoes over the sausage and vegetables, then sprinkle with Italian seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, stir the mixture, adjust seasoning if needed, and serve over pasta, rice, or in hoagie rolls.
