Ingredients
- Ground beef: 1 lb (450 g)
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Crushed tomatoes: 28 oz (800 g) can
- Tomato sauce: 15 oz (425 g) can
- Beef broth: 4 cups (950 ml)
- Italian seasoning: 2 teaspoons
- Lasagna noodles: 8 oz (225 g), broken into pieces
- Ricotta cheese: 1 cup (240 g)
- Mozzarella cheese: 2 cups (200 g), shredded
- Parmesan cheese: 1/2 cup (50 g), grated
- Fresh basil: for garnish, chopped
Instructions
- Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess fat and transfer to the crockpot.
- Sauté the diced onion and minced garlic in the same skillet for 3-4 minutes until translucent, then add to the crockpot.
- Add crushed tomatoes, tomato sauce, and beef broth to the crockpot. Stir well and sprinkle in Italian seasoning. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add broken lasagna noodles to the soup, ensuring they are submerged. Cover and cook until noodles are tender.
- Mix ricotta cheese with half of the mozzarella and half of the Parmesan in a separate bowl. Serve the soup topped with a dollop of the ricotta mixture and sprinkle with remaining cheeses and fresh basil.
