Ingredients

  • Ground beef: 1 lb (450 g)
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Crushed tomatoes: 28 oz (800 g) can
  • Tomato sauce: 15 oz (425 g) can
  • Beef broth: 4 cups (950 ml)
  • Italian seasoning: 2 teaspoons
  • Lasagna noodles: 8 oz (225 g), broken into pieces
  • Ricotta cheese: 1 cup (240 g)
  • Mozzarella cheese: 2 cups (200 g), shredded
  • Parmesan cheese: 1/2 cup (50 g), grated
  • Fresh basil: for garnish, chopped

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess fat and transfer to the crockpot.
  2. Sauté the diced onion and minced garlic in the same skillet for 3-4 minutes until translucent, then add to the crockpot.
  3. Add crushed tomatoes, tomato sauce, and beef broth to the crockpot. Stir well and sprinkle in Italian seasoning. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add broken lasagna noodles to the soup, ensuring they are submerged. Cover and cook until noodles are tender.
  5. Mix ricotta cheese with half of the mozzarella and half of the Parmesan in a separate bowl. Serve the soup topped with a dollop of the ricotta mixture and sprinkle with remaining cheeses and fresh basil.
