Ingredients

  • 2 pounds chicken thighs
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken thighs in the crockpot.
  2. In a bowl, mix honey, soy sauce, garlic, rice vinegar, ginger, and black pepper.
  3. Pour the mixture over the chicken.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, remove chicken and set aside.
  6. Mix cornstarch and water in a small bowl.
  7. Stir the cornstarch mixture into the sauce in the crockpot.
  8. Cook on high for an additional 15 minutes to thicken the sauce.
  9. Return chicken to the crockpot and coat with the sauce.
