Instructions
- Rinse the chicken under cold water and pat dry. Cut into chunks if desired.
- Wash and chop the carrots and potatoes. Slice carrots into rounds and dice potatoes into cubes.
- Add chopped onion to the bottom of the crockpot, followed by the carrots and potatoes. Place the chicken on top.
- Sprinkle minced garlic, thyme, rosemary, salt, and pepper over the ingredients.
- Pour chicken broth over the ingredients, ensuring everything is covered. Set the crockpot to low for 6-8 hours or high for 4-5 hours.
- Once cooked, shred the chicken if desired, stir to combine, and serve warm.
