Ingredients
- Boneless, skinless chicken breasts: About 1.5 lbs (680 g)
- Spaghetti: 8 oz (225 g) uncooked
- Cream of mushroom soup: One can (10.5 oz or 300 g)
- Diced tomatoes: A 14.5 oz (410 g) can, with juices
- Bell peppers: One cup (150 g) diced
- Onion: One medium diced
- Garlic: Three cloves minced
- Italian seasoning: One tablespoon
- Shredded cheese: One cup (100 g) cheddar or mozzarella
- Salt and pepper: To taste
- Chicken broth or water: One cup (240 ml)
Instructions
- Place the boneless, skinless chicken breasts at the bottom of the crockpot and season with salt, pepper, and Italian seasoning.
- Layer the diced bell peppers, diced onion, and minced garlic over the seasoned chicken.
- In a separate bowl, combine the cream of mushroom soup, diced tomatoes, and chicken broth. Pour this sauce over the chicken and vegetables in the crockpot.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, break the uncooked spaghetti in half and stir it into the crockpot. Add more chicken broth if needed.
- Once the spaghetti is cooked, sprinkle the shredded cheese on top, cover, and let it sit for 5-10 minutes to melt the cheese.
- Gently stir everything together and serve.
