Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, rosemary, and bay leaf.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Remove chicken, shred it, and return it to the crockpot.
  5. Add egg noodles and cook on high for an additional 30 minutes.
  6. Season with salt and pepper before serving.
