Description
A comforting crockpot chicken noodle soup made with tender chicken and fresh vegetables.
Ingredients

- 1 lb boneless chicken breasts
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon parsley
- 8 oz egg noodles
- Salt and pepper to taste
Instructions
- Place chicken in the crockpot.
- Add chicken broth, carrots, celery, onion, garlic, thyme, and parsley.
- Season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken, shred, and return to the pot.
- Add egg noodles and cook for an additional 30 minutes.
- Serve hot.
Notes
- Adjust seasoning to taste.
- You can add more vegetables if desired.
- Use rotisserie chicken for a quicker option.
