Ingredients

  • Chicken breasts: 4 pieces (about 1.5 lbs or 680 g)
  • Long-grain rice: 1 cup (about 200 g)
  • Chicken broth: 4 cups (about 950 ml)
  • Onion: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Carrots: 2 medium, diced
  • Peas: 1 cup (fresh or frozen)
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1/2 teaspoon (or to taste)
  • Dried thyme: 1 teaspoon

Instructions

  1. Prepare the chicken by rinsing and patting it dry. Season with salt and pepper.
  2. Measure and mix the other ingredients: rice, broth, diced onion, carrots, and minced garlic.
  3. Layer the chicken at the bottom of the crockpot, followed by the vegetables and rice. Pour the broth over the mixture.
  4. Set the cooking time: cook on low for 6-7 hours or on high for 3-4 hours.
