Ingredients
- Chicken breasts: 4 pieces (about 1.5 lbs or 680 g)
- Long-grain rice: 1 cup (about 200 g)
- Chicken broth: 4 cups (about 950 ml)
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Carrots: 2 medium, diced
- Peas: 1 cup (fresh or frozen)
- Salt: 1 teaspoon (or to taste)
- Pepper: 1/2 teaspoon (or to taste)
- Dried thyme: 1 teaspoon
Instructions
- Prepare the chicken by rinsing and patting it dry. Season with salt and pepper.
- Measure and mix the other ingredients: rice, broth, diced onion, carrots, and minced garlic.
- Layer the chicken at the bottom of the crockpot, followed by the vegetables and rice. Pour the broth over the mixture.
- Set the cooking time: cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the peas and stir. Shred the chicken and mix everything together before serving.
